Here’s a vibrant, no-bake energy bar recipe with beetroot powder—perfect for a nutrient-dense snack that supports energy, blood flow, and endurance:

Servings: makes 8–10 bars

Ingredients:
1 cup high protein rolled oats
½ cup almond or cashew butter
¼ cup honey or maple syrup
¼ cup ground flaxseed or chia seeds
¼ cup dried cranberries or chopped dates
¼ cup unsweetened shredded coconut
2 teaspoons beetroot powder
1 tablespoon cacao nibs or mini dark chocolate chips
½ teaspoon cinnamon
Pinch of sea salt
1–2 tablespoons warm water (as needed for consistency)

Instructions:
1. Combine oats, flaxseed, beetroot powder, cinnamon, salt, dried fruit, and coconut in a large bowl.
2. In a separate bowl, stir together the nut butter and honey/maple syrup until smooth. Pour the mixture over the dry ingredients and mix thoroughly.
3. If the mixture is too dry, add warm water, 1 tablespoon at a time. It should be slightly sticky and hold together when pressed.
4. Press the mixture evenly into a parchment-lined 8×8-inch pan or shape into bars or balls by hand.
5. Refrigerate for at least 1 hour to firm up.
6. Slice into bars or squares. Store in the fridge for up to 1 week or freeze.
